A Little Breakfast Ritual

Breakfast doesn’t have to be boring, in fact, it can be very pretty and nutritious!

Chia pudding is one of those simple little recipes that feels much more special than the effort it takes to make. A few ingredients, a few minutes of preparation, and by morning you have a creamy, satisfying breakfast ready to go.

Why chia?

Chia seeds are small, but they bring quite a bit to the table. They’re a good source of fibre, contain plant-based omega-3 fatty acids (ALA), and provide minerals such as calcium, magnesium and phosphorus.

And there’s something rather clever about them: chia seeds absorb liquid and develop a soft gel-like texture, which is what gives chia pudding its pudding-like consistency.

Add some fresh fruit and you have a breakfast with plenty of colour, texture and natural sweetness.

Simple Chia Pudding

You’ll need:

  • 3 tbsp chia seeds
  • 1 cup milk or your favourite plant-based milk
  • ½ tsp vanilla
  • 1–2 tsp maple syrup, honey, or another sweetener, if desired
  • Fresh berries or other seasonal fruit
  • Optional: nuts, seeds, coconut flakes or a spoonful of nut butter

To make it:

Mix the chia seeds, milk, vanilla and sweetener in a jar or bowl. Stir well, let it sit for about 5–10 minutes, then stir again. This second stir helps prevent the seeds from settling together.

Cover and refrigerate overnight, or for at least 3–4 hours.

In the morning, give it a stir and add your favourite fruit and toppings.

I especially love it with mango, strawberries and kiwi — simple, colourful and delicious.

And perhaps that’s the best thing about this kind of breakfast: it doesn’t have to be complicated to be nourishing.

A little preparation the night before can make the morning feel just a bit easier. 🌿
